By the way, I made some truly awesome cupcakes last week from this recipe. They are truly, mind-blowingly good. They’re just super moist and tasty. I think the Apple Cider Vinegar is the magic ingredient.
Anyway, I then made my own frosting by beating cream until it was quite thick, adding a pinch of salt, a tsp of vanilla and just enough icing sugar to thicken it a little more than regular whipped cream… I whipped it to the almost-butter stage. The best icing I’ve had in ages, though, sadly, non-vegan, ruining the veganese quality of the cupcakes. But the Vegan Fluffy Frosting linked in that page is also good, just not mind-blowing.
